Prawn Mango Curry

I absolutely love Prawn Mango Curry. For everyone who knows me well, Prawns are ❤️.

So here’s my recipe for a flavourful and light Prawn Mango Curry that is easy to make. I tried a Prawn Mango Curry at some restaurant a few months ago and totally loved the combo. The combination of Mango and Prawn together is so wonderful, there’s like a comforting balance to the entire meal. Hope you enjoy this Prawn Mango Curry recipe as much as I did. 😁

Ingredients (Serves 3-4):

500g Medium Sized Prawns
(deveined & deshelled in case of fresh)
1 Mango (diced)(Green mangos – Langras – for sourness)
1 cup Coconut Milk
2 Onions (finely chopped)
1 Tomato (sliced)
4 Green Chillies (whole)
12-15 Curry Leaves
1 tsp Mustard Seeds
1 tbsp Fennel Powder (Roasted & grinded fennel seeds)
1 tsp Ginger (grated)
1 tsp Garlic (grated)
2 Cloves
1 inch Cinnamon Stick
1 Green Cardamom
5-6 Peppercorns (whole)
1 Bay Leaf
3 tbsp Coconut Oil
1 tsp Salt

Prawn Marination:
1 tsp Garlic (grated)
1 tsp Ginger (grated)
1 Lemon
1 tsp Salt
1 tsp Red Chilli Powder
1/4 tsp Turmeric Powder
1 tbsp Coriander Powder

Method:

1. Start with marinating your prawns (I used frozen prawns so let them thaw first) and then marinate, and keep aside for atleast an hour.
2. Take a deep pan, on high flame, add 3 tbsp Coconut Oil and once the oil is hot, add 1 tsp Mustard Seeds and let them sizzle and splatter for a few seconds, and then add 2 Cloves, 1 inch Cinnamon Stick, 1 Green Cardamom, 5-6 Peppercorns (whole) & 1 Bay Leaf. Let it cook for a few seconds till the oil is flavoured.
3. Now add your onions and let them cook till softened for about 5-6 minutes. Add 1 tsp grated ginger, 1 tsp grated garlic, 4 whole green chillies and 12-15 curry leaves, cook for a few seconds till the raw smell of garlic & ginger goes.
4. Then add your sliced tomato, and once softened, add your prawns and mangos together, and let it cook for about 1-2 minutes (don’t want the prawns to overcook), and then add your 1 tbsp roasted fennel powder, stir and mix well. Pour in your coconut milk, stir again, add 1 tsp salt, cook for a minute on low and turn off the flame. Serve it with steamed rice!
